“Alica Pasta” is an award-winning handmade pasta created by an independent, family-owned company, and offers a truly discernible difference in quality.
The secret to producing high quality pasta is to use only good quality durum wheat semolina and to use only traditional methods of cooking and drying.
Composed of 80% "PRECO" quality, the semolina used in this pasta has a very high ratio of proteins that gives good colour and elasticity. The semolina is then processed by "non-grinding mills" so that the flour is not overworked and retains its “natural characteristic".
Using these very old traditional methods, the pasta takes more time, more space and more human sources to produce in the end, less pasta. But what it also means is that the fine traditional flavours are preserved – thus creating the high quality taste we demand of “Alica Pasta”.
